Perfecting the vegan quiche has been something which has given us at the VRC great pleasure. We have a couple of great recipes, where blended tofu and vegan cream cheese make an incredible egg alternative.

This recipe goes a step further and adds a unique product called The Vegg.  It is based on nutritional yeast flakes, with other added ingredients and forms a substance very similar to an egg yolk when you add water to it.

It's great to add an 'egg' style flavour and consistency to dishes. The Vegg is available from buy in the UK from Vegan Store and Veggie Stuff.

A truly superior version of rice salad. The dressing is particularly gorgeous.

Top Tip: try varying the vegetables according to your budget and what needs using up in the fridge! Any of these work well:

  • grated carrot
  • mangetout
  • lightly steamed French beans
  • shredded lettuce (eg cos)
  • lightly steamed fresh soya beans (edamame)

Steaming the squash or pumpkin in this lovely dish makes it much quicker than roasting or baking, yet the flavour is rich – and most of the prep can be done while the squash is cooking.
It is easily transformed into a more substantial dish by increasing quantities and serving with sauce and salad.

30-40 minutes

An unusual, lovely way to cook aubergines. The salad can be served hot or cold and will keep in the fridge for 2-3 days. We like it with dahl and/or cauliflower & potato curry. Alternatively, serve with chapattis, dairy-free raita (use plain soya yoghurt and add the usual grated cucumber and cumin powder) and tempeh rashers.

Top Tip: no need to salt aubergines, as in days of yore – they are now bred bitterness-free! 
 

30 minutes including baking time
These little beauties are a doddle to make. Try them hot from the oven with soups or stews. Alternatively, grill with melting vegan cheeze* and strips of moist sun-dried tomato or roasted red pepper.
