Choc Cake from the Co-op!

The Co-op Chocolate Cake mix in a packet is vegan, hooray for them - and us.
But instead of de-veganising it by adding an egg as they suggest, try this. Follow the instructions on the back of the packet then add to the dry mixture:
1 med-large banana, well-mashed
1/2 tsp baking powder
90-100ml soya or other dairy-free milk.
- You want the cake mix thick enough to cook but thin enough to cover each tin evenly - use a rubber spatula to spread.
- Use a balloon whisk (hand) or electric cake mixer to mix everything well together, add to the cake tins and bake as per packet instructions.
- Very quick and easy and the cake tastes very good.
- Remember to leave the cakes to cool thoroughly before removing from tins on to a cooling rack.
- Filling ideas:
- we creamed together a little cocoa powder with icing sugar and vegan marg for a quick filling then scattered it with blueberries. Yum.
- Alternatively, try spreading a bit of raspberry jam in the middle together with a bit of chocolate soya dessert - a bit messy but very nice indeed.
