Cashew & Apricot Smoothie Has Instant Zing & Taste - Healthy Fast Food! 
 
This makes a great breakfast - or a high-energy boost if you are training.

Ingredients: 

75g/2½ oz raw cashews (pieces are fine and cheaper)
240ml/8fl oz soya or other dairy-free milk, fortified if possible
1 tsp pure vanilla extract or essence
1 medium banana, peeled and cut into chunks
8 unsulphured dried apricots (available from health shops and good supermarkets)
Options: a pinch of ground cardamom is very nice with this, or a tiny drop of orange flower water - or try both for a dreamy Middle Eastern taste!

Method: 

1. Grind cashew nuts until smooth. Set aside

2. In a blender, process the apricots and a little dairy-free milk until smooth

3. Add all the other ingredients and blend until creamy

4. Serve in attractive glasses
