Falafel in Pitta Bread
Vegan
This traditional dish is as easy as you want to make it. Bought falafels are widely available but if you have time, make your own from our lovely recipe!

8 falafel (sold chilled in large supermarkets or health food shops) - or make your own
4 pitta breads
2 tomatoes, thinly sliced
Shredded lettuce
Thinly sliced cucumber
1-2 tbsp finely chopped parsley
Vegan mayonnaise such as Plamil or Granovita from large supermarkets or health food shops
Salt and black pepper
Optional: sweet chilli sauce and a sprinkle of ground cumin
1. Lightly toast or warm pittas first. Slice a thin piece lengthways from each pitta. With a sharp knife, carefully open each one.
2. Slice each falafel into pieces. Put mayonnaise into pitta, then add tomato,and lettuce. Share out falafel slices between the 4 pittas. Drizzle sweet chilli sauce over everything if using. Eat immediately - or wrap in foil to transport without mess.
