Giant Fried Mushroom on Toast

This is a healthy snack which is also rich and incredibly yummy! The cooking process makes the mushroom tender and succulent..
Aminos is a kind of low-salt soya sauce - very good for flavour. Braggs or Marigold are the main brands. Tamari soya sauce is wheat/gluten-free but higher in salt. Main brands are Clearspring or Essential.
Use gluten-free bread and tamari soya sauce for a gluten-free meal.
Oil spray
1-2 giant mushrooms per person
1-2 slices of wholemeal bread per person - use gluten-free if appropriate
Aminos OR a little tamari soya sauce - see ingredients notes above
Freshly ground black pepper
1. Wipe the mushrooms clean with kitchen towel. Remove the stalks.
2. Heat a large frying pan and squirt with a little oil spray. Place mushrooms flat in the pan and cook until tender - about 5-7 minutes, depending on how thick the mushrooms are. Cover with lid if necessary. Test with a sharp knife to make sure they are cooked all the way through.
3. Just before serving, make the toast. Add a little aminos or tamari to the pan, coat the mushrooms in this and serve hot on the toast, with a grinding of black pepper if desired.
