Italian Tomato Basil Dressing
Vegan
This is a really simple, delicious and healthy salad dressing or dipping sauce. Fat-free too!
6 sun-dried tomatoes (from a packet, not the oily ones in a jar!
1 fresh tomato, coarsely chopped
1 garlic clove, crushed
4 tbsp water
2 tbsp balsamic vinegar
¼ tsp salt, or to taste
1. Cover sun-dried tomatoes with boiling water in a heat-proof bowl and set aside.
2. Blend the fresh tomato, garlic, basil, water, vinegar and salt with a hand blender or in a food processor.
3. When the sun-dried tomatoes have softened, drain and add them to other ingredients and purée mixture until smooth.
4. The dressing will keep in a screw-top jar in fridge for up to a week.
