Low fat crunchy salad with chilli tofu

Ingredients: 

100g/3 oz marinated tofu, cubbed
100g/3 oz mixed sprouts
50g/1.5 oz green beans, chopped
50g/1.5 oz sugar snap peas
¼ small red onion, finely chopped
¼ small red pepper, cut into pieces
25g/1 oz cherry tomatoes, halved
Handful of spinach leaves, chopped
1 stick of celery, chopped
Dressing
1 tbsp hemp or linseed oil
1 tbsp light soya sauce
Splash of lime juice
Small pinch of dried chilli flakes
Pinch of salt and Pepper

Method: 

1. Mix all salad ingredients together in a bowl.

2. Mix dressing ingredients separately, then pour over the top of the salad.
