Finding delicious pastries that are suitable for vegans until now has been rather challenging. So here at Viva!, we were over the moon to discover that Jus Rol pastry have started selling refrigerated croissant dough, which is butter free! The packs, which make six croissants, are available in most large supermarkets, alongside other refrigerated pastry.

Ingredients: 

Filing ingredients eg:
4 pieces vegan bacon, chopped into little squares
6 sundried tomatoes, finely chopped
10g/ 1/4 oz vegan cheese, grated
1 packet Jus Rol Croissant Dough

Triangular-scored sheets of pastry pop out of the packaging, ready to be rolled individually, and then stuffed with… well… whatever you like!
We thought we’d share some delicious filling ideas with you and show you how it’s done. The beauty of these little crispy warm bundles are that they work with both sweet or savoury fillings, so can be dressed up and enjoyed for any sort of meal.

Here are some filling ideas
Sweet:
Dark chocolate spread
Dark chocolate (broken into pieces) with small banana chunks
Jam, topped with vegan whipping cream (after cooking)
Maple and pecan

Savoury:
Mushroom and vegan cheese
Vegan cream cheese and cranberry
Sundried tomato and vegan cheese
Vegan cheese and bacon
Vegan pesto and cream cheese
Marmalade and tahini paste

Method: 

1) Gather together filling ingredients and one packet of croissant dough.

2) Peel open croissant packet and gently remove the roll of pastry.

3) Separate it on a chopping board and cut along the score lines into six separate triangles

4) Prepare your filling(s) pictured are sundried tomato, vegan bacon and grated vegan cheese, which have all been chopped into small pieces.

5) Place a teaspoon of filling about an inch from the widest edge of each triangle.

6) Roll this edge up over the filling and then continue rolling up to form the croissant shape.

7) Turn the ends in to create a curved traditional croissant shape.

8) Lightly grease a baking tray and arrange the croissants equally on it.

9) Glaze the croissants with soya milk and bake for 10-12 mins or until golden brown, according to packet instructions. Serve warm with coffee or other beverage.

I cannot believe this is vegan!!!! There is nothing I miss more than croissants. I'm going straight to Waitrose! Thanks!
