Easy Like Sunday Morning Big Cooked Breakfast

There’s nothing like a cooked breakfast. This one, adapted from Martin Shaw Cooks Veggie Guide, proves that you don’t have to sacrifice taste for health! Although animal-free foods are naturally cholesterol-free, try using oil spray to further reduce the amount of oil you cook in - and serve with pure, fresh orange juice for an added vitamin C boost.

Shoyu and tamari are the best varieties of soya sauce. Try Kikkoman, Essential, Clearspring brands.

For a wheat/gluten-free option, use tamari rather than shoyu with the mushrooms. Omit the sausages and rashers and replace with fried slices of tempeh flavoured with a little tamari and smoked paprika. Omit the potato scones altogether.
