Borlotti Beans in Coconut Milk

Freeze time: unsuitable for freezing

2 tablespoons vegetable oil
1 onion, finely chopped
2 x 425g/150oz can borlotti beans
400g/13oz canned chopped tomatoes
400g/13oz can of coconut milk
1 teaspoon tumeric
pinch chilli powder
salt and freshly ground black pepper
a little chopped fresh coriander
1. Heat the oil in a saucepan: put in the onion and cook gently for 10 minutes. Add the beans, mashing them a bit, then stir in the tomatoes, coconut, turmeric and chilli powder.
2. Simmer for 5-10 minutes, until well heated through then season to taste and serve, sprinkled with chopped coriander.
