Chicory Salad with Toasted Walnuts and 'Cheese'

A really tasty and simple way to eat chicory - especially if you've never had it before.

Serves: 
2-4 as side dish
Time: 
10 minutes
Ingredients: 

2 heads of chicory, washed and chopped into medium-sized pieces
1 tbsp olive oil
100g/3oz walnut pieces
2 tsp sea salt

100g/3oz  vegan cheese, chopped into small pieces

Dressing
1 tbsp cider vinegar
1 tsp agave nectar
2 tsp Dijon
4 tbsp olive oil
Salt & pepper

Method: 

1. Place the chopped chicory in a salad bowl. 

2. Coat the walnuts with the olive oil and salt, then brown them under a medium-heated grill for 5 minutes.

3. Meanwhile, mix all the ingredients together for the salad dressing.

4. Bring together by mixing the chicory, walnuts, 'cheese' and dressing in the bowl and serve immediately.
