French Onion Soup

Ingredients: 

5 medium onions, sliced thinly
3 cloves of garlic, crushed
2x175ml glasses of red wine
750ml/1¼ fl oz vegetable stock
4 tbsp balsamic vinegar
20g/ ¾ oz vegan margarine (Pure for example)
8 slices of wholemeal bread
80g/3 oz vegan ‘cheese’ (Sheese or Cheezly for example)
8 bay leaves
* Vegan ‘cheese’ is available in all good health stores

Method: 

1. Sauté the onions and garlic in vegan margarine for 15-20 mins until brown.

2. Stir well before adding wine, stock and vinegar.

3. Bring to the boil and simmer for 10 mins.

4. Toast the bread and top with grated vegan ‘cheese’ and grill until lightly melted.

5. Serve soup into bowls, slice pieces of bread and ‘cheese’ in half and place on top of soup.

6. Decorate with 2 bay leaves on top.
