Potato Salad

Ingredients: 

900g/2lb new potatoes or other potatoes, peeled and chopped into medium-sized pieces
4 tbsp vegan mayonnaise or make your own
1 tbsp rosemary
Salt and pepper to taste

Additional ideas for things to be added: 

  • Fresh herbs
  • Wholegrain mustard
  • Spring onions

Method: 

 1. Peel the potatoes, if you're not using new potatoes, then boil them in salted water until tender, for around 15 mins.

 2. Drain, then place in a serving bowl with the mayonnaise and rosemary. Mix in well and serve.
