Roasted Aubergines and Courgettes

A tasty way to enjoy aubergines and courgettes, hot or cold.

Serves: 
2 (4 as a side dish)
Time: 
25-30 minutes
Ingredients: 

1 aubergine, chopped into chunks
1 courgette, sliced into disks
3 cloves garlic
2 tbsp olive oil

Method: 

1. Pre-heat your own to 200C/440F/ Gas Mark 6. 

2. Arrange the aubergine, courgette and garlic in a medium-sized oven dish, then sprinkle with the olive oil.

3. Roast for around 20 mins, until the veg is soft and golden. Serve hot or cold.
