Sweet and Sour Shallots

Ingredients: 

30ml/2tbsp olive oil
450g/1lb shallots, peeled and trimmed
45ml/3tbsp red wine vinegar
15ml/1tbsp muscovado sugar
sea salt and freshly ground black pepper
few green spring onion tops, chopped

Method: 

1. Heat olive oil in large pan and add whole shallots.

2. Sauté for 2 minutes, making sure they don’t stick.

3. Add vinegar, sugar and seasoning, then cover and cook for further 3 minutes.

4. Pour into dish and sprinkle with spring onions.

5. Serve immediately. (Delicious hot or cold)
