Delicious filling dish for those wanting a delicious healthy curry which is very low-fat

Made in honour of a meat-eater who loved eating this dish in Hong Kong. Apparently, it tastes very much like the real thing!

This is a truly sumptuous dish yet it isn't difficult. If you don't have cooked wholegrains, they can be made - as with the sauce and salad - while the squash is baking. The picture here shows the recipe made with quinoa. Try experimenting - a fried smoked tofu cubes or a few handfuls of cooked aduki beans would work well in the recipe.

An interesting way to use artichoke hearts - which can be bought in tins or frozen. They are also delicious in salads! This comforting recipe is low-fat yet very satisfying.

A simple, easy curry that's good served with warm chappatis or brown rice. Alternatively, try our easy dahl recipe - and add a dollop of plain soya yoghurt on the side for good measure!
